Transcriptomic time-series analysis of cold- and heat-shock response in psychrotrophic lactic acid bacteria

Abstract Background Psychrotrophic lactic acid bacteria (LAB) species are the dominant in microbiota of cold-stored modified-atmosphere-packaged food products and main cause spoilage. Despite importance psychrotrophic LAB, their response to cold or heat has not been studied. Here, we studied transcriptome-level cold- heat-shock spoilage with time-series RNA-seq for Le. gelidum, Lc. piscium , P. oligofermentans at 0 °C, 4 14 25 28 °C. Results We observed that cold-shock protein A ( cspA ) gene was all three species. Our results indicated DEAD-box RNA helicase genes cshA cshB also play a critical role LAB. In addition, several RNase were involved oligofermentans. Moreover, network inference analysis provided candidate response. Ribosomal proteins, tRNA modification, rRNA ABC efflux MFS transporter clustered species, indicating these could be part machinery. Heat-shock treatment caused upregulation Clp protease chaperone identified transcription binding site motifs gelidum piscium. Finally, showed spoilage-related upregulated temperatures. Conclusions The this study provide new insights on predicted using used as targets future studies.
